The Great Sphinx is located in Giza, both in real life and in Assassin's Creed Origins. Find it a short trot down the road leading west out of the village by the water. You can access this region as soon as you assassinate Medunamun in main quest The False Prophet, on the off chance you've not done that yet somehow.
A thorough search around the Sphinx's hindquarters will reveal a crawl space you can enter. Light your torch and proceed to the dead end, then enter the crack in the wall. Continue on, collecting loot on the way, and drop down into the lower region of the tomb. Eventually you will come to a large circular dais with a map modelled on it - this actually a planetarium, as a glance at the ceiling above you will make obvious.
If you have completed all 12 Stone Circles in Assassin's Creed Origins as part of the Bayek's Promise quest, all the constellations above will be lit, and you can interact with the map to open a doorway to the Esfet Oon-m’Aa Poo Ancient Mechanism. This is the question mark you've been unable to fill out on Giza map!
To activate the mechanism and finish off the Great Sphinx saga, you need 50 silica, which is a big ask. There are four pieces in this room, as it happens, but if you need more, go visit some tombs and collect some more.
